Among Aosta typical dishes, one that is absolutely compulsory to eat is fondue, usually made with a very well known regional Protected Denomination of Origin cheese, that is fontina cheese. Another local cuisine celeb is the Aosta Valley cutlet, a veal escalope coated in breadcrumbs and fried together with ham and cheese. There’s then a whole other dimension represented by Aosta Valley wines, which include many interesting labels such as Donnas and Torrette Superiore.
